My first go at a Trade Overhaul. I want to stress that it's a work in progress, and to expect values not to be perfect, but I think it's good enough to post and gather some feedback I strongly suggest you use a mod that either increases the max amount of quarries/mines, or makes them unlimited. Those materials are a vital part of building a city, and I made this with the expectation users won't be afraid of building a mine.
The goal is to remove how gimmicky the current trading system is, as well as boosting how productive a few professions are. Buying everything with firewood, or only getting stone/iron from traders shouldn't be common strategies. Anyway, onto the changes.
All items can be traded to merchants, however your goods will sell for less.
Removed Seeds from General Traders, to fix a potential crash issue with other mods.
Increased the value of most produced goods, except for firewood, which was heavily decreased.
Increased the value of all produced resources.
Increased the amount of stone/iron/coal/leather you harvest, as those felt a little too low.
Coal will no longer be burned as fuel.
Fixed mushroom weight "bug".
The current prices, to give you a feel for things.

Known Issues:
Due to how the price system is set up, items will appear more valuable than they actually are. Upon docking, the correct values will be shown. Not much I can do about this.
Mods which add new items or change the value of existing items may obviously have issues with pricing.
Thanks to Mozter on Reddit for figuring out how to keep villagers from burning coal.
